Sweet n' Sour Meatballs




In a medium bowl, combine the ground beef/chicken, eggs, bread crumbs and onion. Mix thoroughly and shape into golf ball-sized balls.

In a large skillet over medium heat, gently brown the meatballs and set aside.
In a large saucepan, combine the brown sugar, tomato paste, flour, water, vinegar and soy sauce. Mix thoroughly. Add meatballs and bring to a boil. Reduce heat and simmer, stirring often, for 30 minutes.

Key West Chicken




  • Mix all the ingredients together, pour it over the chicken and marinate for an hour or two.
  • Bake covered for 1 hour on 375
  • Uncover and bake skin up for 15 minutes, skin down for 15 minutes then right side up again for an additional 10 minutes. 
  • Serve over rice

    Balsamic Chicken with Mushrooms

    • Heat oil in a skillet over medium high heat and saute onions until transparent
    • Sear the chicken top down with the onions, until it is nicely browned.
    • Add the garlic and mushrooms and continue frying, scattering the mushrooms, onions, and garlic over the chicken pieces. 
    • Cook for about 3 minutes, then add the combined vinegar, broth, bay leaf and thyme and bring to a boil.
    • Transfer the chicken to a chicken pot and bake for 1.5 hours on 325°, covered. 
    • Set aside the chicken on a plate, and add the sauce to the skillet with the cornstarch and water, remove the bay leaves and simmer until the sauce caramelizes and thickens. 
    • Pour sauce mixture over the chicken and bake for another 1/2 hour.

    Pan Fried Steak n' Fries



    • Steak: Smear the tablespoon of oil in and on the sides of the skillet with a paper towel. Heat the skillet on high and when the oil is hot, add the steak and lower the flame to medium. Sear 11 minutes on each side for a medium well done steak. Serve immediately.

    • Fries: Heat the pot, add the oil and fries, lower the flame to medium and sprinkle with the tablespoon of Cajun. Stir every 5 minutes until preferred texture is reached, drain on paper towels - serve hot.

    Hunny n' Curry Chicken


    • Preheat oven to 350 degrees F (175 degrees C).
    • Place chicken pieces in a shallow baking pan, skin side up.
    • Combine the oil or melted margarine, honey, mustard, salt and curry powder, and pour the mixture over the chicken.
    • Bake covered in the preheated oven for 1.5 hours, and uncovered for 30 minutes, basting every 10 minutes with pan drippings, until the chicken is nicely browned, and the juices run clear.
