Caramelized Onion Chicken



Preheat the broiler. Place chicken thighs in a single layer in a baking pan, and sprinkle with paprika and garlic powder.
Broil for 8-10 minutes. 
Heat the oil in a medium sized skillet and sauté the onions. 
Combine the melted margarine with the brown sugar and soy sauce, stir this into the sautéed onions, and pour over the chicken. 
Cover the baking pan and return it to the oven and bake at 350°F (180°C) for 1½-2 hours.
Remove the foil and continue baking, uncovered, for an additional half hour, until the chicken has a deep brown color.

I was looking for a simple way to prepare chicken and caramelized onions because I don't have a lot of fancy ingredients in the pantry. This looks like just the thing I need. Thanks!
